I'd never say brown or chocolate. Even for OST - there are some shots in which you can clearly see tan in the boots. Obviously tan in DMC/AWE, but also definitely tan in COTBP too.
The caboots chocolate is too much even for the OST style - too dark. And their tan is way too bright and saturated.
For me, these photos (and the rest of their series) are the ultimate color guides for the boots (and everything else):

as they are studio shots - pure white light, no filters, no effects, no nothing, and the background and the surroundings are also white/gray, neutral, so no color bleeding from them.

Thanks guys!! I'm very excited in getting my cobbler line up for the stitch work I would do it but I don't have a sewing machine that can Handel it ! Lol

Yeah, I totally agree with what Adenry said. They're definitely a tan color, but they have been aged a LOT, and have therefore been darkened so that in some shots and under certain lighting they almost look brown. This goes for all 4 movies, although I would argue that in movie 1 and movie 4 they are of a slightly darker shade. Still, a sort of darkish, dirty-tan is the best way to go.

Ok that sounds good also what would be the good base color then? As before the ageing process?

Not quite true - I know that JDs number 1 boots were much darker in OST as I saw them and looked under the cuff myself to see the original colour. They then aged the other pairs (ie stunt/backup/wet etc) which were left over from the previous films to match.

Interesting... But they were originally tan, so they just aged them to a darker brownish hue, right? I mean, in OST they definitely seemed more brown than in the previous films, but I never once got the impression that they were a true "chocolate."

If they did they would of course be guaranteed continued repeat business from all of those Jack's out there.
Surely someone out there would be keen to make some!
I thought CABoots do a customer pair on their site made to measure but its i think 50$ more for it.

Indeed they do, but ordering those turned out to be a disaster!
